True Manufacturing was founded in St. Louis in 1945, is still family-owned, and builds its commercial refrigeration in Missouri. Its reach-in refrigerators and freezers, glass-door merchandisers, sandwich and pizza prep tables, back-bar coolers and undercounter units are among the most widely used commercial refrigeration in North America. True also sells a residential line that includes undercounter refrigerators, beverage centers and wine cabinets.
True units are built for continuous duty, and most of their failures relate to that duty cycle rather than to defects. On most True reach-ins the condensing unit sits at the bottom of the cabinet and draws air from near the floor, where dust, grease and flour collect. Newer True equipment uses hydrocarbon refrigerant (R290), which calls for specific handling and brazing procedures during sealed-system service. Knowing both facts shapes how a True service call begins: at the floor-level condenser, with the right tools for the refrigerant on the data plate.
Reach-ins and prep tables: reading the symptoms
A True reach-in that warms during service usually has a condenser airflow problem: a dirty coil, a failed condenser fan motor, or a cabinet pushed too close to a wall so its exhaust has nowhere to go. As the condenser clogs, the compressor runs longer, pressures climb and the cabinet struggles to recover after door openings. Left alone, the compressor overheats and trips its protector, and the unit begins cycling off for long stretches.
Frost on the evaporator points to defrost or airflow problems. On freezers, a failed defrost heater, termination thermostat or defrost timer or control lets ice build until the coil blocks airflow. On refrigerators, an evaporator fan that has stopped, or a door gasket leak, causes frost and rising temperature. Prep tables have an additional complaint: the rail runs warm while the cabinet is fine, usually from lids left open, pans filled above the cold zone or blocked air passages.
Water on the floor usually means a clogged evaporator drain, a failed condensate evaporator heater or a drain tube knocked out of place. Worn hinges and overloaded door shelves make doors sag, so they no longer seal even with a new gasket.
Preventive maintenance and cold-holding
True equipment rewards preventive maintenance more than almost anything else in a kitchen. Clean the condenser coil monthly in most kitchens, and more often near fryers, griddles or loading doors, with the power off, using a stiff brush and a vacuum. Replace torn gaskets promptly, tighten or replace sagging hinges, and keep the grille in front of the condensing unit clear of boxes and mop buckets. Inside the cabinet, keep product off the evaporator fan cover and leave space for air to circulate.
The FDA Food Code uses 41°F or below for cold holding of time- and temperature-controlled foods, and the Southern Nevada Health District checks cold-holding temperatures during its inspections across Clark County. Logging temperatures with an independent thermometer at opening and mid-shift catches a unit that is drifting before it becomes a lost-product problem.
What Las Vegas does to a True cooler
Las Vegas kitchens and bars run hot, and outdoor patio bars expose refrigeration to summer air well above the conditions most units are designed around. A bottom-mounted condenser near a cook line pulls in air that may be warmer than the room average. Desert dust blows in through back doors and loading areas and mixes with kitchen grease on the coil, forming a mat that a quick brushing does not fully remove. In summer, more frequent coil cleaning, better kitchen ventilation and moving units away from heat sources all help.
Monsoon storms bring short outages and voltage swings. After an outage, confirm that each unit restarted and is pulling down to temperature; move product if one is not. Surge protection for electronic controls is a sensible precaution in buildings where storms regularly cause power blips.
Back-bar coolers in casino bars and lounges face a particular combination: constant door traffic, spilled drinks reaching the condenser and limited space for air to escape under the counter. Cleaning those condensers more often than kitchen reach-ins is usually justified.
Residential True units
True's residential undercounter refrigerators and wine cabinets share the commercial line's build quality but live in very different places: kitchen islands, home bars and outdoor kitchens. They breathe through the front grille, so a rug, a toe-kick panel or dust buildup in front of the grille reduces cooling. Wine cabinets are sensitive to temperature swings, and a cabinet that cannot hold steady may have a sensor, fan or control issue. Outdoor installations need shade and ventilation, and a tripped GFCI after a storm is a common reason an outdoor unit stops.
