Many Traulsen upright reach-ins use a top-mounted, self-contained refrigeration system. That design keeps the condensing unit away from floor-level grease and mop water, but it also places the condenser where kitchen heat collects, near the ceiling. In a Las Vegas kitchen in summer, that air can be considerably warmer than the room thermostat suggests, and the condenser's efficiency depends on it.
Common failures by system
Condenser and condensing unit: dust and grease clog the condenser fins, raising head pressure and run time. A condenser fan motor that slows or stops makes the problem worse. The first sign is often a cabinet that cannot recover between door openings during a rush.
Evaporator and defrost: freezers use electric defrost with heaters and a termination sensor. A failed heater or termination sensor causes the evaporator coil to ice over, blocking airflow and warming the cabinet. On refrigerators, an evaporator fan that fails or a door left ajar causes similar symptoms. Ice on the coil is the visible clue.
Doors and gaskets: Traulsen doors take a beating, and worn gaskets, loose hinges or misaligned doors let warm, moist air in. That adds load, frost and condensation. Hinges and self-closing mechanisms are serviceable, and a new gasket is one of the most cost-effective repairs on any reach-in.
Controls and sensors: electronic controls monitor cabinet temperature and defrost. A sensor out of calibration or a failing control can cause short-cycling, failure to defrost or inaccurate readings. We verify readings with an independent thermometer before replacing controls.
Blast chillers and food safety
Blast chillers bring cooked food down through the temperature danger zone quickly. The FDA Food Code calls for cooling cooked foods from 135°F to 70°F within two hours and to 41°F or below within a total of six hours. A blast chiller that cannot meet its cycle may have a dirty condenser, a weak fan, a refrigerant problem or a failed food probe. Because cooling records matter during inspections by the Southern Nevada Health District, a chiller that misses its targets should be checked promptly.
Routine care, summer heat and power blips
Daily: log cabinet temperatures with a separate thermometer, wipe gaskets and check for tears, and make sure doors close fully. Weekly: check the condenser for visible dust and grease. Monthly or more often in greasy or dusty kitchens: clean the condenser coil with the power off, using a brush and vacuum, and keep the area around and above the condensing unit clear so hot air can escape. Do not store boxes on top of a reach-in with a top-mounted condensing unit.
Keep the evaporator fan path clear inside the cabinet and avoid overloading shelves. Check drain lines for clogs if water appears inside or below the unit.
Las Vegas kitchens get hot, and many restaurants run long hours. A reach-in rated for a particular ambient temperature may struggle when the kitchen exceeds it. Improving kitchen ventilation, keeping the space above the unit open, and cleaning coils more often all help. After monsoon power outages, check that units restart and pull down to temperature, and move product if they do not.
Undercounters, prep tables and roll-ins
Traulsen's undercounter refrigerators and prep tables take more abuse than uprights: they sit beside griddles and fryers, cooks lean on them, and drawers are opened hundreds of times a shift. Drawer slides and rollers wear, drawer gaskets tear at the corners, and condensers at floor level pick up grease and flour. A prep table whose pans run warm while the cabinet holds temperature usually has lids left open, pans overfilled above the cold zone, or a weak fan feeding the rail.
Roll-in units, used in banquet and institutional kitchens to accept loaded carts, depend on a good door seal at floor level and a clear threshold. A bent ramp or a damaged bottom gasket lets cold air spill out continuously. These faults are mechanical and repairable, and catching them early prevents the frost and condensation problems that follow.
